Let’s be Real for a second.. I can never give up pizza. However, when I do eat most pizzas GF/non-gf I get a flare up and I go through a cycle of regret and self blaming. Was that pizza really worth it?? You are making yourself sicker blah blah..

So I decided to march on a quest and have a guilt free, flare free, and healthy pizza. This is my first experiment a chickpea based crust, home made vegan mozzarella and sauce.

I like this pizza because not only is it gluten free it’s grain free and the crust is full of protein WINNING!

*Note: as usual all ingredients I use are organic and non-gmo.

For the Crust:

Ingredients:
2 cups chickpea flour
1 cup water
2 tsp olive oil
dash of salt
½ cup marinara or pizza sauce
1 tbs olive oil

Instructions:
Preheat oven to 375°. Line a baking sheet with parchment paper.
In a medium bowl, stir together flour, water, 2 tsp olive oil and salt until thoroughly mixed.
To prepare crust, spread mixture out in a circular shape (Or multiple circles if making individual pizzas) until it’s about ¼” thick.
Bake in oven for 15-20 minutes, until edges are slightly crispy.
While crust bakes, toss kale in small bowl with 1 tbs olive oil.
Remove crust from oven. Flip parchment paper and crust upside down on baking sheet. Gently pull baking sheet away from crust.
Spread sauce over crust. Add the cheese and basil. Bake in oven for 5-7 minutes. Slice and enjoy right away.

For the Cheese: ( I got this from the hot for food pizza challenge)

ingredients:

1/2 C raw cashews (soaked for at least 2 hours)

1 C unsweetened almond milk

2 tsp lemon juice

1 1/2 tsp tapioca flour/starch

1 tsp nutritional yeast

1 tsp sea salt

1/4 tsp onion powder

1/2 tsp garlic powder

1/4 tsp white pepper

1 C pizza sauce

1/2 C whole basil leaves

Instructions:
Drain and rinse the raw cashews from the soaking water. Add to a blender with almond milk, lemon juice, tapioca, nutritional yeast, onion powder, garlic powder, sea salt, and white pepper and combine until very smooth.

Heat this cheese mixture over medium heat in a small sauce pan, whisking until thickened (approx. 8-10 mins).

Now sit back relax and enjoy your guilt free pizza!
