Good weather calls for a good barbecue this recipe may be overdue but you can re-purpose it and use your oven or indoor grill.

First thing you need to do is pick your vegetables. I picked zucchini, onions, mushrooms, tomatoes and red peppers. You can also add tofu if you want protein in there but I made a bean salad and quinoa on the side since I am not a big fan of tofu. You can put what ever you heart desires except for lettuce I don’t think that would be a good idea!

2 tablespoon olive oil
4 tablespoons lemon juice
1 tablespoon lemon zest
1 tablespoon of minced garlic
Himalayan Pink Salt and freshly ground pepper to taste
I added some paprika to taste as well.

After that I just brushed the skewers until each skewer with saturated with deliciousness and threw it on the grill.
